Oatmeal Butterscotch Cookie Recipe

Since it is the holidays I feel that I need to share my go to Christmas cookie recipe. Now this is not a typical holiday cookie. In fact, they could be made anytime of the year and be just as enjoyable.

They just happen to be one of the things I do every year to feel Christmasy. They look and smell of Christmas.

I hope you’ll enjoy them as much as I do.



2 1⁄4 cups flour
1 teaspoon baking soda
1 teaspoon salt
Dash of cinnamon
1 cup butter, softened
3⁄4 cup brown sugar, firmly packed
3⁄4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups Old-Fashioned oats
Half bag of butterscotch chips (about 1 cup)



  1. Preheat oven to 375 degrees F.
  2. Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside. powder
  3. Mix butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.batter
  4. Gradually beat in flour mixture. dough
  5. Stir in oats and morsels. cookiedough
  6. Drop rounded Tablespoonfuls onto an ungreased baking sheet.
  7. Bake 7 to 8 minutes (if you like crispy cookies cook a couple minutes longer).
  8. Cool on baking sheets for about 2 minutes, remove to finish cooling.
  9. Enjoy!
